Slow Cooker Stuffed Peppers

Every year I FALL in love with Fall and all of the warm, delicious dinners that I get to experiment with! Something is different to me about a warm meal out of the crockpot rather than grilling up chicken and veggies in the summer. The temperature is up and down but is slowly starting to consistently stay in the 50’s now which means hoodies, thick socks, hot cups of coffee, fires, warm sweaters, and delicious Fall recipes being pinned all over my pinterest.

One crock pot meal to try that is easy, quick, and delicious are these epic Slow Cooker Stuffed Bell Peppers.

Ingredients:
  • 1 lb lean (I use 99% lean Natures Promise) ground turkey
  • 2 packages steamable brown rice
  • 1.5 cups broccoli slaw
  • 1 1/2 cups shredded skim mozzarella cheese
  • 1 can of organic black beans (rinsed and drained)
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1/2 tsp chili powder
  • Black pepper & sea salt
  • 6 medium sized bell peppers
  • Avocado or fresh guacamole 
  • Organic olive oil cooking spray

Directions:
  1. Spray the inside of your crock pot with cooking spray, lightly. Turn on to low-heat.
  2. In a bowl, combine and mix the ground turkey, black beans, rice, 1 cup of cheese, salsa, broccoli slaw, cumin, chili powder, salt, and pepper. 
  3. Take the bell peppers and slice the tops off the peppers off. Remove the seeds and the stem from the peppers.
  4. Spoon the mixture evenly divided into the peppers.
  5. Place peppers into the crock pot and cover with the lid. Cook the on low-heat for 5-6 hours. Then, cooking them on high-heat for 2-3 more hours. Make sure the peppers are tender and the turkey is cooked before you remove them.
  6. Once cooked, remove them and top the peppers with the remaining 1/2 cup of cheese and put them back into the crockpot for 10 minutes on low to melt the cheese.
  7. Remove again and top with 1 tbs guacamole or sliced avocado. Drizzle with hot sauce or sriracha & enjoy!

This is a well-balanced meal packed full of veggies, lean protein, and healthy fats. It has a ton of flavor, is packed with micronutrients, and full of fiber! Great recipe to try out when cooking for the whole family and limited time to cook. Stick it in the slow cooker and you’re done!
