DON’T KNOCK IT UNTIL YOU TRY IT.
Seriously. This combo is such a bomb lunch or dinner. I usually like to eat this for lunch! It’s a combination of grilled chicken, banana slices, and roasted sweet potatoes topped with peanut butter, cinnamon, and sometimes a little bit of honey! It satisfies those sweet and savory cravings but provides you with tons of fuel! Food is fuel after all.
-Take left over grilled chicken and slice into small pieces or cubes.
-Combine in a bowl with roasted sweet potatoes and heat in the microwave for a minute or two.
-Slice a banana and add to the bowl.
-Heat up 1 or two tablespoons of peanut butter (or almond butter) and drizzle on top.
-Sprinkle with cinnamon and drizzle with honey.
How I roast my sweet potatoes:
-Pre heat oven to 420 degrees F.
-Wash, dry, and then slice 3-4 sweet potatoes into small cubes.
-Spray a baking sheet with organic olive oil cooking spray and arrange sweet potatoes onto sheet.
-Spray potatoes with cooking spray and then season with garlic, sea salt, and pepper.
-Roast in the oven for 20 minutes or until golden.
